Introduction
FSSAI stands for Food Safety and Standards Authority of India which is the authority responsible for setting globally a benchmark for food standards and ensuring that all the food businessesfollow these standards and adopt good manufacturing and hygienic practices.
The Food Safety and Standards Authority of India (FFSAI) has been established under Food Safety and Standards, 2006. There are some mandatory functions to be performed by FSSAI under FSS Act, 2006 as mentioned below:
- Framing of Regulations to lay down the Standards and guidelines in relation to articles of food and specifying appropriate system of enforcing various standards thus notified.
- Laying down mechanisms and guidelines for accreditation of certification bodies engaged in certification of food safety management system for food businesses.
- Laying down procedure and guidelines for accreditation of laboratories and notification of the accredited laboratories.
- To provide scientific advice and technical support to Central Government and State Governments in the matters of framing the policy and rules in areas which have a direct or indirect bearing of food safety and nutrition.
- Collect and collate data regarding food consumption, incidence and prevalence of biological risk, contaminants in food, residues of various, contaminants in foods products, identification of emerging risks and introduction of rapid alert system.
- Creating an information network across the country so that the public, consumers, Panchayats etc receive rapid, reliable and objective information about food safety and issues of concern.
- Provide training programmes for persons who are involved or intend to get involved in food businesses.
- Contribute to the development of international technical standards for food, sanitary and phyto-sanitary standards.
- Promote general awareness about food safety and food standards.

In simple words, all the individuals running a food business may it be of selling or manufacturing or storing requires FSSAI Registration. It is a compulsory compliance which if not complied with may lead to high compliances.
Applicable Fee Structure
- The FSSAI Registration fees charged by Food Business Operator (FBO) is Rs. 100 per annum
- The FSSAI state license charged by food businesses is Rs. 2000 to Rs. 5000 per annum. *The fees vary from state to state.
- The FSSAI Central license charges is Rs. 7500 per annum.
Penalty
- As per Section 50 of the Food Safety & Standards, fine of Rs. 2 Lakh or penalty of Rs. 25,000/- is charged by the seller in the case, where the nature and quality of food is not up to the quality prescribed by the Act.
- As per Section 51 of the Food Safety & Standards, fine of Rs. 5 Lakh is charged by manufacturer, seller, storage, distributor, importer, when any of them are caught selling of sub-standard food products to the public.
- As per Section 53 of the Food Safety & Standards, Rs. 10 Lakh is charged for publishing misleading advertisement where false description, nature or quality or substance is mentioned. The publisher or person involved in publishing the advertisement shall be liable.
- As per Section 54 of the Food Safety & Standards, Rs. 1 Lakh is charged by manufacturer, seller, storage, distributor, importer where food products are found to contain extraneous matters.
- As per Section 55 of the Food Safety & Standard, Rs. 2 Lakh is charged by food business operator or importer who fails to comply with FSO directions.
- As per Section 56 of the Food Safety & Standard, Rs. 1 Lakh is charged by manufacturer or processor where unhygienic or unsanitary practices are followed.
